Das Domaine de l'Envol bewirtschaftet 20 Hektar Reben, darunter drei Grands Crus und mehrere Lieux-dits. Seit 2010 wird ökologisch gearbeitet, später kamen biodynamische Methoden hinzu; synthetische Pflanzenschutz- und Düngemittel sind ausgeschlossen. Ziel ist ein lebendiger Boden, der Trauben mit Herkunftsausdruck hervorbringt, sowie eine spontane Gärung mit eigener Hefeflora.
