Chablis is the northernmost Burgundy appellation, about 130 km southeast of Paris in the Yonne département. The region grows exclusively Chardonnay on the famous Kimmeridgian limestone – a fossilized seabed from the Jurassic era studded with oyster fossils. This geology gives Chablis wines their distinctive salty-mineral character and fine acidity.
The hierarchy has four tiers: Petit Chablis, Chablis (Village), Chablis Premier Cru (40 climats), and Chablis Grand Cru (7 climats: Les Clos, Vaudésir, Valmur, Grenouilles, Bougros, Preuses, Blanchot). Top estates like Raveneau, Dauvissat, William Fèvre and Vincent Dauvissat rank among the world's most sought-after white wine producers.
